Daring bakers challenge July 2012- Cheese crackers
Daring Bakers July challenge was hosted by Dana McFarlane. Dana challenge everyone to make crackers.
I made some sheep cheese, rosemary and thyme crackers. They were really good and I will definitely make them again.
115 g butter, well softened
225 g grated aged sheep cheese (the better the cheese, the better the cracker)
190 g flour
6 g salt
60 g finely chopped almonds
1 tablespoon finely chopped rosemary
1 tablespoon finely chopped thyme
Combine butter, rosemary, thyme and cheese in a stand mixer and beat well (can also be done by hand). Add the flour, salt and nuts and stir to combine. Form the dough into two tight logs and wrap with cling film. Chill for at least an hour and up to several days. The log can be frozen at this point for several months. Heat the oven to moderate 160°C. Slice a log into 5mm coins and place on a parchment lined baking sheet. Bake about 20 minutes until golden brown. Store in an airtight container and eat within three days. Try this recipe with different cheeses, nuts (or no nuts), and spices. Get creative!
