Daring Bakers Challenge September 2011- Empanadas
September Daring Bakers Challenge was hosted by Patri from Asi Son Las Cocas and she challenge everyone to make empanadas. We were given two dough recipes to choose from and freedom to fill our empanadas with what ever we want.
Instead of one big empanada I made four small ones. I filled mine with some caned tuna and homemade tomato jam. With glass of yogurt it made great breakfast.
For the dough:
200 g flour
100 ml warm water
20 ml olive oil
8 g dry yeast
1/2 teaspoon salt
1/2 teaspoon hot paprika
For the filling:
100 g canned tuna
5 tablespoons of tomato jam
pinch of salt
1 teaspoon chopped fresh rosemary
Shift the flour into a bowl, make a well in the middle and add all the ingredients. Mix with a wooden spoon until all the ingredients have been incorporated. Turn dough onto your counter and knead for 8 minutes. Make a ball and allow to rise covered with a cloth for about half an hour before using.
Once risen, turn the dough into a floured counter. Oil four small pie tins and dust some flour in them. Cut dough in two equal pieces. Spread one part of the dough using a rolling pin. Put dough in tins. Prepare the filling.
With fork tear tuna into small chunks add tomato jam, salt and rosemary and mix till all ingredients are incorporated.
Roll out the rest of dough and cover empanadas. Put into oven preheated to 180 C and bake for 25 minutes. Allow empanadas to cool a bit before serving.
